We have been looking forward to the new year for many weeks. The campus just isn’t the same without your energy, spirit and comradery. We have a full semester of special events along with new menu concepts and offerings.
I am very pleased to share that Adam Pagan, Wheaton Dining’s Executive Chef, has successfully completed the Culinary Institute of America’s ProChef III Certification, a testament to his culinary skills and knowledge. The Culinary Institute of America (CIA) is the world’s premier culinary college and ProChef III is the highest level of certification.
Adam worked hard throughout the month of June studying cuisines and cooking techniques from various regions of the world. His countless hours of kitchen practice and study helped prepare him for this rigorous, two week certification process. In the first week, Adam prepared three-course meals with wine pairings from Korea, China, Greater Antilles and Lesser Antilles. In the second week, Adam was evaluated on India, the Lesser Antilles and a second wine pairing meal. Adam had to pass three written exams and present a case study. You must pass every section in order to achieve the ProChef III certification.
Adam has always had a passion for his trade but the ProChef III certification process has invigorated that passion to higher level. We are fortunate to have Adam leading our culinary team and continually raising the bar for culinary techniques and acumen. Providing operational and culinary excellence for our students, faculty, staff and Wheaton guests is the quintessential standard by which Adam lives each day.
